Sweet and Sour Pork with Risotto and Pineapple Vegies

This was my first run on both dishes. Surpriseingly enough the risotto was pretty good.
The pork was tough and dry even though i marinated it for 40 minutes as prescribed in the recipe. I don't know how to make pork tender ... maybe i should brine it like i do the chicken. More research is needed. The recipe was based upon this one from Cooks.com which i followed pretty closely, only i separated the veges because i was trying to feed Jason and he wont eat them. The sauce was a reasonable rendition of sweet and sour, but the corn starch breading didn't really work totally for me.
The pineapple vegies were ok. I added some fresh fennel, basil, and parsley. The fennel taste really worked for me; but the basil and parsely goofed up the dish visually. In the end i added halved cherry tomatoes, that worked. But i sauteed the dish too long so it lacked crispness. I was trying to follow both the sweet and sour pork recipe and the risotto, both of which started with sauteed vegies. Next time i'll take the veges out sooner and not use so much oil to start with.
The risotto was based upon About:com's Italian food recipe. I used Arborio rice that i got in bulk from WinCo. After hearing all the horror stories about screwing up risotto, i was surprised that my first attempt tasted pretty good. The recipe didn't give any proportions so i had to wing it. I used up a whole box of chicken stock and ran out before the rice had absorbed enough juice so i ended up adding about 2 cups of Riesling. I tasted it towards the last and decided it needed some salt and pepper. I'm declaring the risotto a success, even though Denise goes, "yeah it was rice ... who can screw up rice". Of course she is talking about the pre-cooked packets that you throw in the microwave and hit the 30 second button twice. At some point somone should make a total environmental study along with a taste test; but for now i will just go with how i feel. I feel good
, and much prefer cooking it from scratch.
