I had a bit of a problem with the rice.  Although i cooked it according to these instructions there was too much water left in the pot when it had finished the simmering and the standing.  But there were some variations: (1) i doubled the recipe, but i didn't extend the cooking time, and (2) i toasted the rice grains in olive oil prior to adding the water and bringing to a boil.  I did end up with acceptable rice but i had to nurse it quite a bit to finish it off.  Too me it ended up not being as flakey and tastey as i rememberd from last time.  So next time, don't try to brown this particular rice, and research how increasing the volume of rice and water affect the timing.

All in all, in the larger context of the shrimp fried rice, the rice part ended up being quite acceptable.  I added extra shrimp, both little cocktail ones and larger ones.  I never get enough shrimp from the take out boxes, so if i make it myself i can load it up with tasty, delicious, shrimp that is not over cooked.
