Spanish Rice, Refried Beans and Guacamole with

So i tried to render one of Poor Girl Eats Well's recipes on a traditional Mexican Restaurant plate with rice and beans, guacomole and salad. It was delicious.

The Spanish rice was leftover from my BBQ Drumsticks meal, and still just as good.

The refried beans are easy, no consultation on internet necessary. Soak red beans overnight in salt water and molasses. Bring pot to boil and then simmer for couple hours.  Watch out that the water does not boil away.   Blend in food processor till smooth and reserve some of the juices.  Today i sauteed some garlic and finely chopped Jalapeno peppers in a pan with the reserved juices of the beans, then stirred in the beans.  It was, as they say on the food channel, off the charts delicious.
