Chicken with Mushrooms and Zucchini in Wine Sauce

Based substantially on this recipe.  Only i brined the checken for about 2 hours. It was very tender and succulent. I added Zucchini. It whole dissh came out well.


Next time maybe try reducing the sauce by itself after taking out all of the veggies and perhaps adding some capers like the Veal Piccata at Armandos.

It wouldn't hurt the experience to cut the chicken in bite sized pieces ... not as pretty on the plate, but that way wouldn't need to cut the chicken with your fork, just pop it in your mouth.  Also serve chicken beside the rice not on top, that way maybe the sauce wouldnt get lost as much.  I mean its all about the sauce here. Something else on the plate might help the presentation too.

The rice was plain brown rice that tasted kind of bland, but then i added some salt, pepper, and olive oil and some more wine and stock to spruce it up at the last minute.  It ended up ok.

Previously Denise had banned mushrooms as an ingredient.  But she allowed this dish ... perhaps now i get a new flavor for my pallet since she liked it.

We both lost weight with this meal, but even so we'll eat just fruits and veggies till about Wednesday getting ready for the Christmas feast on Friday.

I'm thinking that on Wednesday i'll eat the leftover chicken; but i want to redo the sauce (as mentioned above) and make some new rice.  This time try to make risotto out of simple brown rice instead of Arborio rice ... maybe make it nutty and put some toasted sliced almonds in it.  You see i have to crank up my looking-forward-to-the-meal thingy so as not to feel deprived for the next two days.

Ok i made the changes to the leftovers.  The mushroom wine sauce is mostly from mushrooms sauteed in chicken sauce and then add some wine butter reduction.   I think the the brown rice  risotto with sliced almons worked  better too.  Note the rice will drink much more than twice its volume in liquid and takes quite a wile to do so.  I served it with some Nan and red grapes.
