Chicken Chorizo Burrito with Spanish Rice and Red Cabbage Slaw in Tamarind Mayo

My usual burritos were made from yesterday's baked chicken meal, see Nigella's recipe, layered as follows ... flour tortilla, re-fried beans, chicken, chorizo , smokey cheese, lettus, and home made salsa ... folded for easy eating.

Red cabbage slaw was dressed with my new tamarind mayo.  This mayo was so good i had to hold back from just spooning it down ... but on the cabbage the flavor didn't really come throught.  I want to try it on something like a Talapia.

zoom to album.   For the record here is the tamarind mayo on the Talapia.  That worked well actually.  The other side dishes, not so very much.  But they were a great learning experience.
