Camarones Mexicanos

The shrimp were cooked perfectly, also the spanish rice.  Under the rice was a layer of grated Mozzarella cheese with which i tried to duplicate the soft cheese that was in the Mi Tierra dish, but it didnt come out right ... my Mozzarella was way to stringy and became an irritant to eating it.  But in any case the dish was delicious. 
Denise's said it was good too . 

I followed this recipe very loosely. I couldn't find a jar of Guerrito Peppers but the brine from a can of La Costena Green Pickled Serrano Peppers  seemed to work and make my sauce similar.  I didn't have the time to treat fresh Roma tomatoes so, as usual, i went for a can of S&W Ready-Cut Italian Recipe Tomatos Diced with Garlic, Oregano & Basil.  Hey maybe i could pick up a few bucks by mentioning these guys.
