Chicken Riesling

I followed this recipe but used Riesling instead of Marsala wine. Now i'm going to need to get some Marsala to see it it made any difference. I was happy with the texture and taste of the sauce. I marinated the chicken for a couple of hours ina beer marinade made loosely from this recipe. That was because i though that the surface of BJ's chicken was produced by a beer marinade ... now where would i get an idea like that. Oh well, the chicken skin was nothing like BJ's ... good though. Denise liked it too

This is the dish from BJ's which entised me to try Chicken Marsala

Note the texture of the chicken surface that you see clearly in the lower right side of the picture. Thing is this "breading" does not come off ... not even a little bit. It's like it is part of the chicken itself. Note also that this recipe from BigOven that purports to BJs chicken Marsala does use a flower breading. Somehow i don't think that surface was made from a flower breading.

... ok i found some real Marsala wine at Fred Meyer ... not in the wine department, it was with the sauces. Maybe next week i'll make another pass at this ... this week is sea food ... starting today with gumbo.

Chicken Marsala is one of my favorite Italian chicken dishes. The best I have ever had was in a restaurant down the street from where we used to live on Venice Blvd called Brunos. It was very creamy & the taste of the Marsala wine was just perfect. I have tried it in quite a few other restaurants & it has never measured up. I don't think they are there any longer.

so for you the taste of Marsala wine is very distinct? I guess i'll have to go get some and try it. I think there is a Brunos here, but i doubt that it is related to you Venice place.

The creaminess is important to my taste buds. Most of the others I have tasted are watery & lack body. I can't imagine Riesling doing the job.
