big jim's seafood gumbo recipe

I made this as much as i could according to Big Jim's recipe over at bigoven. Over there i uploaded a different picture. I couldn't get any fresh okra, so that was missing. Next time, either find a substitute or make this when okra is available. Nor did i have any fresh cayenne peppers; and if i could have gotten any probably would not have had the courage to use them. Instead i used 3 evil looking peppers of which i don't know the heritage. Well the gumbo was quite hot enough. I though it was delicious ... Denise liked it too.

Gumbo is another of my favorites. I use Rachael Ray's recipe. Any smoked sausage works. Frozen okra works - no difference. I put shrimp & leftover rock fish in it the last time. I put tabasco instead of Louisiana hot sauce & left out the cayenne. Most of the time I make it too hot. This time even the dog loved the last spoonful over his kibble.

What all do you put in the stock?

lol ... well there in lies a tail. i started with already peeled shrimp and just crab meat ... so i couldn't do it the way they did over at big oven ... ok ok ... so i got a jar of oysters ... put that in about 1 qurt of water and mashed it up a bit and boiled it a bit and added some Squid brand fish sauce that i had around from the great mall of china. it sure tasted like fish stock to me, but i'm sure a purest would quibble.

Seafood Gumbo at New Orleans restaurant, Pioneer Square, Seattle WA. The menu said "A hearty tomato-based stew served with a mound of rice" ... and that it was ... good value for only $6.50. I served mine with the mound (well a bit more than just a little mound) under the stew and no tomato in the recipe. There's "stew" was thicker, more creamy, more like gravey ... i could do that, just don't dilute the rue quite so much.
