Creamy Wild Rice & Broccoli Soup

About: a recipe from poor girl eats well scores again


From her recipe i learned two things about making this kind of soup:

* First is a new way to make the roux - "In the meantime, prepare the flour slurry by whisking together the water & flour" - so there is no oil or butter in the roux - and it is renamed slurry.  But it works the same, imho, and yields a low-cal creamy texture.

* Second is that you don't need to add the brocolli florettes so early, you can add them almost at the end - much fresher, me thinks.

Only variation i made was to steam and food process the borcolli stocks  ... which accounts for the greener look of my soup.  I think it was an improvement ... and a savings ... but then i'm biased

We loved it !!!
