some context about making your own almond milk.

Squeezing my nutsack.

The milk i got was rather good ... but i soaked the nuts too long and already has started to have a tang of fermentation.   Then too i am left with a bowl of nut pulp ... need to figure out what to do with it.

It is a matter of taste for me. With multi grain cereal I don't even bother to filter it. It is how strong you like it or how weak.  In smoothies weak may be better. The published formulas & recipes use a cup of almonds for about a quart of milk. So weigh a cup of almonds, eh?

well using it unfiltered on cereal sounds like a good idea, i will need to try that.  .  i put milk on my some cereal and prunes on top of that ... the almond mash might be a delightful addition.

Have you tried drying and making the almond mash into some kind of candy?
It is rather gritty even with nut soaking. I prefer to grind up trail mix for candy making - better texture & taste.

The article on chem treated almonds is interesting for your almond sources. http://foodidentitytheft.com/trying-to-avoid-almonds-that-are-gassed-heres-a-little-guide/

In my experience don't make big batches unless you use them within a few days, especially if you add a bit of honey for sweetner. Mine die in about 4 days.
I feed the leftover nut residue to my dog.

The Azure Standard almonds states ... "Due to California laws, the "raw" almonds (listed above) have been subjected to a "flash" steam pasteurization process. Although "pasteurized," these almonds still have the taste and texture of raw almonds and will still sprout. " ... so i guess that implies that they do not use the "

Thanks for the information about the shelf life.  consequently this may not be a good application for sharing processed foods.   Do you have any idea how many pounds of raw almonds make a half gallon of milk?
