Banana Bread

Wow i just got 3 dozen eggs and about 30 ripe bananas as a gift from the Universe !

Gonna make most of it up into banana bread.

Maybe this recipe ...

1 stick btter (1/2 cup)
1 cup brown sugar
2 beaten eggs
4 bannans (measured at 3 1/2 cups)
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 tespoon salt
1 teaspoon vanilla (i alwas just use the top of the bottle to measure this and always over spill)

These made 4 3x5 tins, but the tins were about 1/2 full.

In the oven now at 350 ... to take out in about an hour.

Took out at 47 minutes because of knife test.

denise made a dish of banana pudding with nilla wafers and the rest of the bananas are in the dehydrator.

Sua Sponte, my model of these quick sweet breads (cakes) have been the ones i get at the farmers market from the forest fairy bakery based out of Issaquah. They may let me trade some of the giant Zuchinni that i still have, and ones still growing at the SR farm for some more of their loafs ... then i won't need to bake them myself. They are selling very similar loafs for $4 ... but theirs seem to be sweeter than mine.

This "cake" is best eaten with a topping. Here shown with a kiwi cream cheese.

Something I found out from duplicating the Peasant Bread formulas was that this is the best yeast .. although RedStar works & that the pyrex bowls give the most even baking. Mine came out almost exactly as in the pictures.

This is the simplest bread with 5 ingredients well known

flour
yeast
water
sugar
salt

note bene this was mostly for the pyrex bowl suggestion.

Well not exactly the simplest ... quick breads which have no yeast and don't need the rising stage are in fact much simpler. Note that the bannana bread here is a quick breads.

indidentally congrats on your results with rising breads

... i'm going to have to get back to them even though they take much more work; they do have a texture which is impossible to duplicate just using soda.

Hmmm.... you don't have to watch it rise

Hmm ..
measure & sift flour - 1 minute attention
pour sugar & water & get water to good temp - 3 minutes attention
let yeast water plump 1 minute of attention 10 minute wait 1 minute of attention
mix all together & wait 1 hour - attention 1 minute
put in baking bowl - 1 minute - let rise (butter bowl first to keep it from sticking)
set temp & pre-warm oven - one minute attention
cook at 2 temps 425 - 15 min 375 15 min - set microwave alarm 1 min total
dump on cooling rack 15 seconds attention
rub butter (not an ingredient but makes crust softer) 1 minute.
done - < 10 minutes attention.

BTW, I used her suggestion of 3 cups flour vs 4 & in one case did 2 cups general purpose & 1 cup of whole wheat pastery which came out more like Lotus'

ok before i forget …. here is the approx engredients …

½ cup coconut butter
2 T butter
1 ¼ cup brown sugar
3 beaten eggs
4 cups butternut squash puree
1 ¾ cups all purpose flour
1 t baking soda
½ t tespoon salt
1 ½ t vanilla
1 ½ t grated nutmeg

Nice – synchronicity – I am inspired – have some ready bananas for bread making! !

i’d use the original recipe, my recent variation at least for squash, seems too moist – am trying baking longer, but am not sure about it. maybe my soda is tapped out, who knows.
