Stuffed Zuchinni

This was rather good.  I hallowed out 2 large zuchinnies and baked them covered in olilve oil.  Meanwhile i cooked rice, corn, tomatos, onions, garlic, italian sausage and mixed in some chunks of chicken breast.   i added some sage and thyme and  salt and pepper.

Then i spooned the stuffing on a half hallowed baked zuchinnis, graded smonkey cheddar on it,   placed the other half  on top, and then baked it some more.

It was quite good !  Denise liked it too yesyesyesyes.   Dish was suggested by PooleFarm … her zuchinnies … and also discussed at the Farmers market with Kay.   My recipe, however, i made it up wink

i caught this big one at Poole farm null

this time i used just corn and no rice … denise did not like it.  and said the zuchinni was too different than the first … er well it a bigger and older fish  and its  walls were thicker … and maybe i did not bake it long enough. 

the only spice i used, except a bit of salt and pepper, was dried thyme.   i think it worked. 

this time i baked the chicken breast … hmmm … seems a bit less dry … maybe next time try slow baking it even more.   and maybe the rice is mandatory for a stuffing.


oh well … tomorrow i will stuff some pablomas again.   kind of rerunning this week from two weeks ago.
